Gorgeous cheese buns from Brazil!
300 g plain white wheat flour
200 g milk that you have heated to boiling point and cooled down again completely
1.5 g instant yeast/3 g dry yeast/6 g fresh yeast
3 g salt
1 tablespoon melted butter
200 g of queso panela (fresh cheese) or substitute 100 g cottage cheese and 100 g feta cheese)
Place the butter and the milk in a pan. Heat it up and let it cool right down to room temperature or else you will kill the yeast!
Measure the flour into a big bowl.
If using instant or fresh yeast sprinkle it in and add all of the other ingredients, except the cheeses. If you are using dry yeast, make a well in the flour, add 100 g of the milk and wait for 10-15 minutes until a beige sludge forms on the top. Then add all of the other ingredients, except the cheeses.
Mix the ingredients together and then turn the dough out onto the table. Knead well for ten minutes and then return the dough to the bowl. Cover and let rest for 10 minutes. Meanwhile mix up the cottage cheese and the feta into a lumpy blend.
Pull the dough out of the bowl and gently fold in the cheeses. Don’t worry about the dough, worry about the cheeses. You don’t want them smeared into the dough. You want the possibility of getting a big mouthful of cheese when you bite into one.
Put the dough back into the bowl and cover. Let rest 1-2 hours.
Shaping the buns:
Pull the dough out and divide into 12 pieces. Roll each into a ball and place them 5 cm apart on a baking try lined with baking parchment or coarse polenta/semolina. They wil be sticky and that is normal. Don't put more flour on the table but lightly coat your hands in flour and this will make them easier to shape. To see a video on shaping buns, look here.
Cover with a tea towel and let rest 1 hour.
Pre heat the oven to 220 degrees c. Bake for 15-20 minutes or until golden and sounding hollow when tapped. Let cool completely on a wire rack or you will burn your mouth on melty cheese!
Eat any time but especially when watching the World Cup!
