Learn to bake bread in BERKSHIRE. At Birch Cottage Bread. I have a micro bakery based in a shipping container in my garden! I Bake and sell All types of Bread & Teach others To bake real bread. I sell my bread through Pierrepont Cafe, Goring, The Pantry Cafe, Yattendon and local community markets. I teach the following courses Basic Bread Skills, Basic Italian Breads, Rye Breads, Sourdough. I also run Bespoke Bread classes for a min/max of four students email or call me for details. My bakery is listed on the Real Bread Campaign website, has been filmed for the BBC and has featured in Country Living Magazine in 2015 and 2016 and is featured in their Turn Your Hobby Into A Business, Bookazine. In 2017 my bakery was featured in The Sunday Times, business section.

  • Introduction to Italian Breads

    In this four and half hour, hands on course, you will learn to make Focaccia, Ciabatta, Spinach Bread and Italian rolls. We will see how dry doughs and wet doughs produce very different breads and how to make bread baking fit into our busy modern lives. Lunch is included and you will have all your freshly baked breads to take home too. Lots of cheer and chatter and small class sizes to ensure plenty of individual attention from the teacher. You can attend this class as a bread baking beginner or if you are already baking or just want to polish up your Italian bread skills. course cost £75.00 per person Change/Cancellation Policy: If you need to change or cancel your booking you may do so up to fourteen days before your course.   • Basic Bread Course

    Learn to bake bread in Berkshire. During this four and a half hour bread baking course, students will learn the practicalities and principles of how to make a basic, delicious loaf of bread.  We will knead the dough, be amazed that it rises, shape it, bake it and admire it when it comes out of the oven, golden and perfect to take it home with you. You will learn to bake breads with lots of different types of wheat flours and you will also learn to bake soda bread, some of which we will eat for lunch.  This is not a demonstration!  This is a hands on bread baking course in which you will do the baking yourself so come prepared to get sticky and floury.  Class sizes are limited so that you will have time to learn and plenty of attention from the teacher. A simple, elegant lunch will be served and tea, coffee, good cheer and chatter will be available throughout the sessions.  You will learn in a cosy atmosphere where you can ask lots of questions and receive lots of individual attention.   • Sourdough Bread Course

    learn to bake bread in Berkshire. In this hands on course we will teach you how to bake sourdough bread so that you leave the class with an intuitive understanding of what it is, how it works and how to do it at home. At the end of the Sourdough Bread Course we will have answered the following questions: - how do I make and keep a sourdough starter - how do I bake sourdough bread in my busy life - how is sourdough bread different to commercial yeasted bread. The Sourdough Bread Course is a full day.  During the day you will get very sticky and floury as you learn how to bake wonderful crusty wheat sourdoughs with a selection of flours. Also learn how to bake Swedish cracker bread.  An elegant two course lunch, and drinks during the day are all included.  Naturally you will have lots of bread to take home as well as your very own sourdough starter.  The class numbers are limited so you learn in a cosy and intimate environment.  This enables you to ask lots of questions and receive a great deal of individual attention.   • All About Rye

    In this four and half hour course you will learn how to bake with the truly wonderful and amazing thing that is Rye flour. We will use both dark and light organic rye flours in their pure form and also learn how to mix it with wheat flours too for some recipes. The doughs will be sticky and this is a hands on class so come prepared to rediscover your inner child - mud pies will be remembered! Rye bread is gorgeous. A slow burning form of carbohydrate rye makes bread that has amazing flavour and can be easily digested and enjoyed.
