Over the past 18 months, I have run What the Dickens Bakery from Kent (the home of Charles Dickens!) and now Shaftsbury.  Our mission has always been to bake, sell and deliver #RealBread to customers in the local community.

I also deliver a range of bread baking courses run in the comfort of your own home (or mine!).

In my courses, you will learn everything you knead to know about baking perfect bread using Baker's yeast and is ideal for beginners, intermediates ... and even children! 

My Micro Bakery?

My weekly range of bakes include:

  • Wheat - White, brown and Wholemeal
  • Rye - plain, fruit and seeded
  • English-style tins, Bloomers and Cottage loaves
  • French-style sticks, Pain de Campagne and miche
  • Italian-style Focaccia's
  • ... and much, much more

All our bakes are made from organic flour (stone ground where possible) and use just 3 or 4 ingredients: flour, water, salt and yeast (where called for)

  • Bread Baking for Beginners @ Your Home

    Hello #RealBreadLover

    Bread making is easy, fun and rewarding. For me, nothing beats taking a freshly baked loaf straight from the oven and sharing it with friends and family.

    What the Dickens @ Home

    Basically, I deliver the course in the comfort of your home. I bring absolutely everything ... even cakes for morning coffee!! All you need to supply is a passion for making bread, bags of energy and an oven! 

    Courses work best when there are at least 3 persons (up to a maximum of 6), but will depend on the size of your kitchen too!.  Lower numbers are possible. 

    What's Covered?

    I will show you how from one large(ish) batch of white dough we can produce a whole basket of tasty bakes.   From the simple English tin loaf, French sticks, an Italian-style Focaccia to seeded rolls, pesto swirls and much, much more.   You will be amazed just how simple it is.

    I will take you through the 9 basic steps to successful bread making including:

    1. Weighing
    2. Combining
    3. Kneading
    4. Fermenting
    5. Scaling
    6. Resting
    7. Shaping
    8. Proving
    9. Baking

    You will be able to take home everything you bake, step by step notes, 1kg strong, white, organic stone-ground flour and a small gift from me to get you started.
