Martin runs 'What the Dickens Bakery' in the heart of Rochester (the home of Charles Dickens!). Martin bakes, sells and delivers bread to his local community and also teaches a range of basic bread courses.   • An introduction to basic bread making

    Hello keen baker and welcome to my home ...

    Bread making is easy, fun and rewarding. For me nothing is better than taking a freshly baked loaf straight from the oven and sharing it with friends and family.

    In this course I will show you how to make three simple bakes:

    1. A white tin loaf
    2. A dense, moist rye loaf and
    3. A simple Focaccia

    We will look at simple ways to build on these recipes to enhance the look, taste and feel of the bake.

    I will take you through the 7 steps to successful bread baking:

    1. Mixing
    2. Kneading
    3. Fermenting
    4. Knocking back
    5. Proving
    6. Shaping
    7. Baking

    Snacks, refreshments and time to chat are all included :)

    You will take home everything you bake, step by step notes and 1kg strong, white, organic stone-ground flour. This will set you up for baking your first loaf when you get back home.
